The popularity of the coffee beverage relies on the alerting effect of caffeine but quite frequently health concerns have been associated with this purine alkaloid, allowing the development of a market for decaffeinated coffee. The products available for the consumers are artificially produced by industrial process, which usually removes compounds related with the development of flavor and aroma. As an alternative natural genetic variation for caffeine content has been explored but without significant success in Arabica coffee. Decaffito are mutagenized Arabica plants with beans low in or almost devoid of caffeine that can replace the industrialized decaf coffee in a near future.
