Abstract:
We investigated the thickness of brown rice(BR), and its anthocyanin content and RVA properties of 'Heugjinjubyeo' a colored rice variety as affected by different transplanting date(May 15, May 25, Jun 4, Jun 14, Jun 24 : 10day interval) in the middle region of Korea to get the basic information for producing high quality rice. The mode of the thickness of BR was 1.8mm mainly ranging from 1.7mm to 1.9mm which were occupied 86.6~93.5% in transplanting date. There was significant difference in length, width and 1000 grain weight of BR according to both transplanting time and thickness of BR. Anthocyanin content increased linearly from 246.7mg/100g on May 15 to 548.4mg/100 on June 24, and was  highest in 1.9mm on May 25 and in 1.6mm on June 14. Coefficient of variation for anthocyanin content by thickness of BR was lowest as 4.6% on June 24. There was statistically significant difference in RVA properties like peak viscosity, trough, breakdown, final viscosity, consistency and peak time according to both transplanting date and thickness of BR. Peak viscosity, trough, breakdown, final viscosity, consistency and peak time were decreased as transplanting date was delayed and thickness of BR was thinner.
